🥔 Vegetable Fritters with Creamy Dill Sauce

âś… Ingredients

For the fritters:

  • 2 eggs
  • 1 tsp salt
  • 1 tsp Italian herb mix
  • 2–3 potatoes (medium)
  • 2 zucchinis
  • 1 onion
  • 1 carrot
  • 1 garlic clove
  • 2 tbsp semolina
  • Fresh parsley (a handful)
  • Fresh dill (a handful)
  • Spring onion (2–3 stalks)
  • 50 g cheese (grated)
  • All-purpose flour (as needed to bind)
  • Vegetable oil (for frying)

For the sauce:

  • 3 tbsp sour cream
  • 1 cucumber
  • Fresh dill (finely chopped)
  • Salt, to taste
  • Black pepper, to taste

👩‍🍳 Instructions

1. Prepare the vegetables:

  • Peel and grate the potatoes, carrot, and zucchinis using a coarse grater.
  • Place the grated vegetables in a colander, sprinkle with a little salt, and let them sit for 10–15 minutes to release water.
  • After resting, squeeze out as much water as possible using a clean kitchen towel or cheesecloth.

2. Mix the batter:

  • In a large bowl, combine the drained vegetables with:
    • Finely chopped onion, garlic, parsley, dill, and spring onion
    • Grated cheese
    • 2 tbsp semolina
    • 2 eggs
    • 1 tsp salt and 1 tsp Italian herb mix
  • Mix everything thoroughly.
  • Add all-purpose flour, a spoonful at a time, until the mixture becomes firm enough to shape into fritters.

3. Form the fritters:

  • Take 1–2 tablespoons of the mixture and shape into small patties.
  • Press them gently to flatten and even out the shape.

4. Fry the fritters:

  • Heat vegetable oil in a large pan over medium heat.
  • Fry the patties in batches (don’t overcrowd), 3–4 minutes per side, until golden brown and crispy.
  • Place cooked fritters on paper towels to absorb excess oil.

🥒 Make the creamy dill sauce:

1. Prepare the cucumber:

  • Peel and grate the cucumber.
  • Sprinkle with a little salt and let sit for 10 minutes, then squeeze out excess water.

2. Mix the sauce:

  • In a bowl, combine:
    • 3 tbsp sour cream
    • The drained grated cucumber
    • Chopped fresh dill
    • Salt and black pepper to taste
  • Mix well and chill in the refrigerator until serving.

🍽️ Serving suggestion:

Serve the hot, crispy fritters with the chilled creamy dill sauce. You can add a fresh salad or a slice of bread for a complete meal.
