Cheese Pie – GEORY KAVKAZ

1. INGREDIENTS (Serves 6–8)

Pastry

  • 400 g all-purpose flour (about 3¼ cups)
  • 1 tsp salt
  • 180–200 ml warm water (add gradually to bind dough)
  • 2 tbsp vegetable oil (adds tenderness)

Filling

  • 400–500 g cheese (a mix—feta, mozzarella, or similar melty and salty varieties)
  • 1–2 eggs, beaten
  • Optional extras: chopped fresh parsley or dill; pinch of black pepper

Topping

  • 2 tbsp melted butter or oil (to brush before baking)

2. MAKE THE DOUGH

  1. In a mixing bowl, combine flour and salt.
  2. Pour in warm water and oil, stirring until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface and knead for 5–7 minutes, until smooth and elastic.
  4. Shape into a ball, coat lightly with oil, cover it with a towel or plastic wrap, and let it rest for 20–30 minutes—this relaxes the gluten and makes rolling easier.

3. PREPARE THE CHEESE FILLING

  1. While dough rests, crumble or grate your cheese(s).
  2. In a bowl, combine cheese with the beaten egg(s). The egg adds binding and richness.
  3. Stir in herbs and a pinch of pepper if using. Taste—cheese is your seasoning, so adjust accordingly.

4. ASSEMBLE THE PIE

  1. Divide dough into two equal parts. Roll the first half into a circle slightly larger than your baking dish (~25–28 cm/10–11″).
  2. Transfer the dough into a greased pie pan or baking tray, letting edges hang over.
  3. Pour the cheese filling evenly over the base.
  4. Roll the second half of dough into a similar circle and place it atop the filling. Pinch and crimp edges to seal the filling inside.
  5. Brush the top with melted butter or oil—this gives a golden, inviting crust.

5. BAKE & SERVE

  1. Preheat your oven to 200 °C (390 °F) or prepare a covered pan over embers if cooking outdoors.
  2. Bake the pie for 25–30 minutes, or until the crust is deep golden and crisp.
  3. Remove from oven and let it sit for 5–10 minutes before slicing—this helps the cheese set slightly.
  4. Slice into wedges and serve warm—cheese should be melty but not runny.

Serving suggestions:

  • Serve with fresh tomato and cucumber salad, dressed simply with vinegar or lemon juice
  • Offer herbal tea or fresh brewed coffee for a cozy feel
  • Pair with pickled vegetables for a refreshing contrast
